MUFFIN DOUBLE CIOCCO & PESCA

Un muffin è un dolce simile ad un plum cake, di forma rotonda con la cima semisferica. Alcune varietà di muffin sono salate. In genere si possono preparare con ripieno di mirtilli, cioccolato, cannella, zucca, limone o arancia, banana, carote, nutella... I muffin sono prodotti specialmente nel Regno Unito.
Il muffin si distingue nella preparazione da altri tipi di cake o tortini perché nel suo procedimento è sempre prevista la preparazione di due composti: uno con gli ingredienti asciutti (farina, bicarbonato, lievito, cacao, spezie, zucchero...) e uno con gli ingredienti umidi (latte, burro fuso o olio, uova, yogurt...). Questi due composti vanno poi uniti e porzionati con l'aiuto dell'attrezzo per le palline del gelato a mo' di misuratore.



INGREDIENTI (per 12 muffin)

200 gr di farina
60 gr di cacao
190 gr di zucchero
1/2 bustina di lievito per dolci
150 ml di latte
2 uova intere
60 gr di burro fuso

3 pesche a dadini
q.b. gocce di cioccolato
q.b. zucchero a velo


PROCEDIMENTO

Per prima cosa accendiamo il forno a 180° e togliamo la griglia che vi servirà per posizionarvi sopra lo stampo per i 12 muffin.
Cominciamo preparando tutti gli ingredienti necessari (1). Dividiamo quelli secchi da quelli umidi.
Procuriamoci due insalatiere. In una versiamo farina, cacao e lievito setacciati e mescoliamo (2). Nell'altra insalatiera versiamo il latte, le uova e il burro fuso e mescoliamo (3). Uniamo al composto asciutto anche lo zucchero e mescoliamo (4).


Con una frusta (anche con le fruste elettriche se volete) mischiamo velocemente il composto umido e sempre mescolando versiamo a pioggia il composto asciutto. Si formerà una bella cremina vaporosa profumata di cacao.
A questo punto sostituiamo le fruste con un cucchiaio o una marisa di silicone e aggiungiamo i dadini di pesca mescolando delicatamente dal basso verso l'alto (5).
Prendiamo lo stampo in silicone. Se è la prima volta che lo utilizziamo ricordiamo di imburrarlo e infarinarlo; altrimenti sarà già pronto per l'uso senza dover fare nulla.
Se dobbiamo regalarli ricordiamoci di inserire in ogni fessura per muffin una pirottina di carta.
Con l'aiuto di un'attrezzo per fare le palline del gelato porzioniamo l'impasto nelle 12 fessure in maniera abbastanza uguale.


Decoriamo a piacere con le gocce di cioccolato la superficie superiore (6). Inforniamo per 15/20 minuti circa (vale la prova stecchino per vedere se sono cotti).
Mettiamo su una gratella per farli raffreddare completamente poi togliamo dallo stampo e trasferiamoli su un piatto da portata.
Spolveriamo a piacere con lo zucchero a velo.

DOUBLE CHOCOLATE MUFFIN & PEACHES

Ingredients (for 12 muffins)
200 grams of flour
60 grams of cocoa
190 grams of caster sugar
8 grams of baking powder
150 ml of milk
2 eggs
60 g butter, melted
3 peaches, diced

icing sugar to taste

PROCEDURE

With a whip (with the electric whisk if you want) we mix quickly the mixture, stirring constantly damp and rain pour the mixture dry. It will form a nice fluffy creamy sauce flavored with cocoa.
At this point, replace the hoses with a spoon or a silicone marisa and add the diced peach, stirring gently from bottom to top (5).
Let the silicone mold. If this is the first time you remember to use buttering it and flour it, otherwise it will be ready for use without having to do anything.
If we have to give them away remember to include in each slot for a muffin pirottina paper.
With the help of a tool to make the balls of ice cream split up the dough in the 12 slots in a fairly equal.
Decorate as desired with the chocolate drops the upper surface (6). Bake for 15/20 minutes (that is the toothpick test to see if they are cooked).
We put them on a wire rack to cool completely then we remove from the mold and transfer them on a platter. Sprinkle to taste with icing sugar.
