PANZANELLA TOSCANA

Ed ecco un piatto tipico della tradizione toscana: estivo, facile (anzi facilissimo), veloce, fresco, ricco, ma soprattutto BUONO!! Curiosando tra un sito e un blog ho trovato mille varianti.. Ma la VERA panzanella (quella originale - made in Toscana) è solo una.
La Vera Panzanella la si fa con:



INGREDIENTI

pane toscano (quello sciapo senza ne sale ne condimenti)
pomodoro fresco ben maturo
cetrioli
cipolle rosse
abbondante basilico fresco (ligure)
sedano
q.b. sale e pepe
q.b. aceto di vino (vietato quello di mele e vietato quello balsamico)
q.b. olio EVO (meglio se olio toscano)

Darvi le dosi non è necessario. Regolatevi in base a quello che avete in casa. Diciamo che il pane deve essere all'incirca il 50 % del volume totale della panzanella.

PROCEDIMENTO

Iniziate mettendo a mollo il pane. Tagliatelo a pezzi e mettetelo in una insalatiera capiente. Copritelo con acqua fredda e lasciate che si inzuppi ben benino (1).
Intanto tagliate pomodori e cetrioli a cubetti e metteteli in una insalatiera con sale fino in modo da fargli perdere l'acqua di vegetazione (2).
Riprendete il pane e iniziate a strizzarlo ben bene in modo fargli perdere più acqua possibile e riponetelo in una insalatiera a cui aggiungerete il condimento.


Tagliate il sedano (3), la cipolla a lamelle sottili (o a cubetti) (4), scolate ben bene i pomodori e i cetrioli e aggiungete tutto al pane. Tritate grossolanamente il basilico e aggiungetelo al pane (5).


Salate e pepate, condite con olio e aceto e mescolate bene.
Coprite con della pellicola e riponete in frigo per almeno 30 minuti (meglio se 1 oretta). 

Gustata bella fresca è ancora più buona e saporita.
Prima di servire mescolate bene.

TUSCANY PANZANELLA 


And here is a typical dish of the Tuscan tradition: summer, easy (even easy), fast, fresh, rich, but most of all TASTY! Browsing through a website and a blog I found many variations .. But the REAL panzanella (the original - made in Tuscany) is only one.

INGREDIENTS
Tuscan bread (the bland without neither going up or condiments)

salt and pepper

EVO oil to taste (preferably Tuscan olive oil)

Give you the doses is not necessary. Based on what you have at home. Let's say that the bread should be approximately 50% of the total volume of the Panzanella.

PROCEDURE
Begin by placing the bread to soak. Cut into pieces and place in a large salad bowl. Cover with cold water and let them dunk well pretty well (1).
Meanwhile, cut tomatoes and cucumbers into small cubes and place in a bowl with salt to lose water (2).
Shoot the bread and started to squeeze it with your hands well to make him lose much water as possible and place it in a bowl to which you add the seasoning.
Cut the celery (3), the onion into thin slices (or cubes) (4), drain well the tomatoes and the cucumbers and add all the vegetables over the bread.  Coarsely chop the basil and add it to the bread (5).
Salt and pepper, seasoned with olive oil and vinegar and mix well.
Cover with plastic wrap and store in the refrigerator for at least 30 minutes (preferably 1 hour or so).

tasted pretty fresh is even better.
Before serving, stir well.
